The hams are chosen amoung a small amount of national farms and slaughterhouses registered within the DOP of Prosciutto of Parma. The best undergo a strict control to obtain the extraordinary charateristics of Ghirardi's production. Aged at least 16 months to taste only as Farfalla's products do.
